Summer grilling made easy!

One of my favorite things to do in the summer is fire up the grill after a day spent outdoors!

I knew I had to take advantage of my Moms HUGE grill when I was back home last week, and that’s exactly what I did! Our little backyard bbq back in NYC doesn’t stand a chance again my Mom’s backyard beast!

My family loves the traditional meat and potatoes dinner, but I wanted to make one of my favorite recipes that’s perfect for the summer! So after a full day boating, swimming, and hiking at the lake we came back home and I started prepping to make my grilled shrimp tacos paired with a healthier version of Mexican street corn.

I started out grilling the corn on the BBQ for around 3-4 minutes each side (full recipe below). After they were nice and charred it was time to assemble the salad.

This salad was such a huge hit with the fam, and it’s a much healthier version than the typical cheese and mayo entrenched mexican street corn!

Next up was the prawns! After marinating them for around 5 minutes (recipe also below) I popped them on the grill for around 2 minutes each side.

Next up: time to assemble the tacos! I kept it really simple since the true star of the dish are the marinated prawns! I heated up a few corn tortillas on the grill, added some shredded cabbage, added the shrimp and topped with some avocado crema!

Prawn Marinade

Prawn Marinade

Ingredients

  • 1 tablespoon of olive oil
  • ½ teaspoon of chilli powder
  • ¼ teaspoon of ground cumin
  • ¼ teaspoon salt
  • 2 cloves of minced garlic
  • 1 teaspoon of lime juice

Instructions

  1. Add all ingredients in a bowl and mix
  2. Add prawns to marinade for around 5 minutes (any longer and the ime juice will begin to cook the prawns)
  3. Skewer the prans and grill for around 2 minutes each side

Corn Salad:

  • 3-4 ears of corn
  • 1 avocado
  • 2 tablespoons of olive oil
  • 1 jalapeno stemmed, seeded and finely chopped
  • ½ cup of chopped cilantro leaves
  • ½ cup diced red onion
  • 2 tablespoons of cotijo cheese
  • ½ tablespoon of fresh lime juice

Dressing:

  • 2 ½ tablespoons of greek yogurt
  • 1 ½ tablespoons of fresh lime juice
  • 1 minced garlic clove
  • ½ teaspoon of cayenne pepper
  • Salt and pepper to taste

Instructions:

While corn is grilling add all remaining ingredients including the dressing to a large bowl and mix! Once corn is grilled cut the kernels off and add to bowl while still warm. Serve and enjoy!
