This recipe is so easy to make and packs a ton of flavor!
I have been a huge artichoke fan since I was little, but was only introduced to hearts of palm recently and I am hooked! Basically the heart of palm is a delicious, crunchy vegetable harvested from the center of the cabbage palm tree. They are super versatile, and great for you too. Hearts of palm are high in fiber, potassium and vitamin B-6.
Below is my go to summer salad recipe with hearts of palm and asparagus!
- 1 whole cucumber
- 1 tomato
- 1 can of chickpeas
- Reese artichoke hearts
- Reese hearts of palm
- 1/3 cup of feta cheese
- 1/4 cup of finely diced red onion
- 1/2 a cup of squeezed lemon
- Italian seasoning to taste
- Salt & Black pepper to taste
- Combine all ingredients in bowl and mix
