Valentine’s Day

My husband and I used to laugh at all the cheesy Valentine’s Day gimmicks, cards, and candies that show up in stores in the city this time of year, but in the last few years we have become that couple. Don’t get me wrong, we celebrate our love everyday, but there’s nothing wrong with finding a reason to go a little bit over the top when we get the chance. Rather than going out for dinner with all the other couples, we choose to stay in each Valentine’s Day. Which is actually something different for us (if you watch my instagram stories you know we eat out pretty much every night). Since he does so much for me I really wanted to surprise him with a fun Valentine’s Day gift box.

When it comes to gift giving, the card is always my favorite thing to pick out. It’s so easy to get everything for Valentine’s Day at your local Walmart – including the perfect Hallmark Card. You can find the newest collection of Hallmark Signature Cards for Valentine’s Day. This year I wanted to get something cute and funny for Scha, then add in a sappy and personalized love note inside.

For the gift box itself I chose a plain white box, I thought it would look good matched with his red card. Any box will do though! But the more on theme with the day the better.

Next comes the gifts. Since choosing gifts for my husband is hard as it is, I tend to stick with four items that never fail. A cozy nice sweater, cologne, his favorite soap, and one of his favorite treats.

After I had purchased everything I made sure they are fit nicely into the box and all I had left to do was bake one of his favorite treats: Red Velvet Cheesecake Bites.

Easy Red Velvet Cheesecake Bites

Ingredients

  • 16 oz. cream cheese, softened
  • 2 tbsp. sugar
  • 1 c. heavy cream
  • 1/4 tsp. vanilla
  • 1/2 baked red velvet cake, broken into crumbs

Instructions

  1. In a large bowl using a hand mixer, beat cream cheese and sugar until light and fluffy. Add heavy cream and vanilla and beat until stiff peaks form.
  2. Transfer mixture to the freezer to firm up, 2 hours.
  3. Using a small cookie scoop, scoop small balls of mixture and use your hands to form the mixture into ball.
  4. Roll mixture in red velvet cake crumbs, then transfer to a parchment-lined baking sheet. Once all cheesecake bites are rolled, transfer to the refrigerator to chill and harden, at least 1 hour.
